
I was tempted to call this recipe “Chocolate Gordo with Doughy Roli-Polis”. However, I’m trying to do this blog thing right, so I figured I should be serious with the names.
I just “lava” good cup of thick hot chocolate. This beverage is a happy, warm, decadent treat on cold dreary days. For me, it has a happy, comforting drink the day my husband and I trimmed our house with Christmas decorations. We played Christmas music, danced, and drank hot chocolate. Because this is nice and thick, you sip it slowly and enjoy every bit of its goodness.
The key to the hot chocolate, and to getting your desired thickness, is to use a mixture of milk and heavy whipping cream. I provide general measurements below, but you can add more or less of either milk or whipping cream depending on how thick you want it to be.

The Doughy Roli-Polis were easy and fun. I wanted to make something similar to churros, without making churros: a sweet, doughy accompaniment. I remembered an old shortcut to making donuts using store-bought biscuit dough, which solely relies on your ability to cut out a hole at the center and fry in hot oil. To make the donut holes, I simply cut out small circles using one of my cake decorating tips. Find something similarly small, and have fun carving out small circles.
I also wanted to make the presentation festive and beautiful. The addition of the red sugar crystals made this a beautiful, holiday appropriate pairing. I must say… I was impressed with the final outcome! I hope you will be as well…
Lava Hot Chocolate
Serves: 4
Ingredients
3 cups whole milk
10 oz bittersweet chocolate
1/2 cup heavy whipping cream
2 tablespoons brown sugar
1/4 teaspoon nutmeg
1 whole cinnamon stick
1/2 teaspoon vanilla extract
Instructions
- In a medium saucepan over medium heat, combine chocolate and milk. Slowly whisk until chocolate begins to melt.
- Add remaining ingredients and whisk until combined.
- Reduce heat and simmer until all ingredients and chocolate melt together, approximately 10 minutes.
Notes
Option to add more milk to make hot chocolate thinner, or add more heavy whipping cream to make hot chocolate lava-lier (thicker!).
Holiday Donut Holes
Ingredients
1 can refrigerated (store bought) biscuits
1/4 cup red sugar crystals
1/4 cup canola oil, for frying
Instructions
- Separate biscuit rounds and lay out on flat surface.
- Using a small round cutter (or round object like an apple corer), cut approximately 24 holes from six biscuit rounds.
- Heat oil over medium heat.
- Once oil is hot (use a small piece of dough to test oil), begin to carefully drop in dough circles into the pan. These will begin to brown quickly, so flip as soon as soon as one side becomes golden brown. Remove from oil and place in glass bowl.
- Sprinkle red sugar crystals into bowl once all donut holes have been fried. Toss until covered in sugar crystals.
Notes
You have the option to make these into cinnamon donut holes by replacing crystals with 1/4 cup of granulated sugar and 1 tablespoon of cinnamon. Toss donut holes in 2 tablespoons of melted butter then combine with sugar and cinnamon.
