
This salad is incredibly delicious and satisfying. When I started making this salad, I prepared it with cabbage but then got the idea to use shaved Brussels Sprouts for a nice seasonal twist. And it works!
The quantity of the dressing can be adjusted based on the quantify of Brussels Sprouts or cabbage you have. I would definitely wing the amount of ingredients in the salad based on how much you have, but I provided rough measurements below. This is all about the dressing, which can be made “healthier” by using a light mayo instead.
This is definitely one to keep on rotation even after the holidays are over. It’s super yummy!
Shaved Brussels Sprouts Cranberry Salad
Serves 4
Prep Time: 15 minutes
Ingredients
Salad:
2 cups Brussels Sprouts, shaved or thinly sliced
1/4 cup feta cheese
3 tablespoons dried cranberries
2 tablespoons sunflower seeds
Dressing:
1/4 cup mayo
2 tbsp Dijon mustard
1 tbsp apple cider vinegar
2 tbsp honey
Instructions
- In a small mixing bowl, combine all dressing ingredients and mix until well incorporated.
- Add salad ingredients to medium mixing or salad bowl. Add dressing and mix.
Notes
- Option to prepare this salad with red or green cabbage.
